Easy yet delicious summer recipes

It's barbecue time!

As the weather gets nicer and outdoor gatherings become more popular, there can be a lot of pressure to bring along delicious food for a housewarming, barbecue, graduation party, birthday party, birthday barbecue, graduation housewarming...you get the idea. But not everyone has the time or the cooking skills to whip up a gourmet side. Never fear! Here are three easy yet yummy recipes for your next big picnic:

Fruit salad

This is basically the easiest recipe I know, so it's simple but good.

Ingredients:

  • 2 cans fruit cocktail
  • 1 apple, chopped
  • 1 banana, sliced
  • 1 container Cool Whip

Just mix everything together and serve. The amount/number of individual ingredients can be adjusted to taste.

 

Bacon-wrapped water chestnuts

This recipe takes some baking time but the prep is nothing. If you're a fan of bacon, this is amazing. TIP: Consider putting food in a crock pot to keep warm once it's done.

Ingredients:

  • 1 can whole water chestnuts
  • 1 to 1 1/2 lb. bacon, cut in half
  • 2 c. ketchup
  • 1 c. sugar (brown or regular)
  • Other spices to taste

Wrap each chestnut with a strip of bacon and secure with a toothpick. Place in baking dish and bake at 350° for 15-20 min. until bacon is done. Mix together ketchup, sugar and desired spices. Pour mixture over chestnuts and return to oven for 10-15 min. until heated thoroughly.

 

Stuffed burgers

This is another recipe where specific ingredients and the amounts thereof can be adjusted depending on what tastes you're going for. You'll need ground beef (not pre-made patties) along with whatever ingredients you'd like to be cooked into the burger.

Suggested ingredients:

  • Bacon
  • Cheddar cheese
  • Gorgonzola cheese
  • Barbecue/steak sauce
  • Mushrooms
  • Onions

Form patties by hand, and make an indent in half of the patties with your thumb. Put desired ingredients into the middle of the indented patties, and place another patty (a non-indented one) on top. Press the edges together to seal in the ingredients, and throw it on the grill.
